Andrea Carlson is a pioneer of the West Coast’s farm-to-table culinary movement, known both for her finesse and her whimsically inventive approach to cuisine. After working in some of BC’s most influential, ingredient-driven restaurants—among them, Sooke Harbour House, Raincity Grill and Bishop’s—in 2013, she opened Burdock & Co. At this tiny Main Street gem of a restaurant, she serves tasting menus inspired by nature, whether it’s the moon or local citrus fruits.
